ResHall Recipes: Pumpkin Spice tea and cookies

The weather is finally getting a little colder, everyone is breaking out their sweaters and the leaves are changing colors. One of the main things that gets me in the mood for fall is pumpkin spice cookies. The recipe I used only requires three ingredients, which is great for college students with low budgets. You need one can of Libby’s Pumpkin Filling, one box of Duncan Hines Spice Cake and one jar of cream cheese frosting.

First, preheat the oven to 350 degrees. While it is preheating, mix the filling and cake mix into a bowl. Mix it until there is no more cake mix clumps. Next, place a spoon size amount onto a flat pan that has been sprayed or has parchment (wax) paper on. After you have placed each on the pan, place the pan in the oven. Bake for 20-30 minutes. The oven I used was old, so I had to wait around 35 minutes for mine to be done.

Because I used cake batter, the cookies came out with more of a cake texture. I decorated my cookies with cream cheese icing, It was delicious and really simple to make.

Next, I decided to make the pumpkin spice tea. This one took about the same amount of time and tasted fantastic once it was complete. Below are the ingredients:

2 cups black tea (strong prepared- hot)

1/2 teaspoons ground cinnamon

1/4 teaspoons ground nutmeg

1/8 teaspoons ground cloves

1/8 teaspoons ground ginger

1/2 teaspoons vanilla extract

1/2 teaspoons ground allspice

First, heat up the hot water. Make two cups of black tea. Then mix in all the spices into the tea and mix. Pour a serving size into your favorite cup. Mine is my owl cup that says “love the moment,” something I try to incorporate into my daily life. Your tea is now complete and you can enjoy the taste and smell.

I was able to make the tea while I was waiting for the cookies to be completely baked. This worked out perfectly, because I could enjoy both of them at the same time. I highly recommend that if you have not made pumpkin spice food or drinks this fall to make it pronto. Pumpkin Spice is something you simply need to have during the fall season. Also, this is a great way to get your friends together to cook, talk and have a great time.
