As college students, we are all always looking for cheap options for dinner. Sometimes, it is nice to switch up our options instead of eating Ramen, Easy Mac or ordering from Vocelli’s for the third time in a week. The following recipes are some of my favorites and will offer you fairly quick, affordable and satisfying meals. All of these meals will serve at least 4 people, which could offer a fun night of roommate bonding.

1. Peanut Chicken (serves 4)

Ingredients:

  • 1 box of pasta (whichever kind you prefer)

  • 1 package of chicken breasts (4)

  • 1 package of “A Taste of Thai Peanut Sauce Mix”

  • 1 can of coconut milk (lite or regular)

  • 1 bunch of green onions

  • Sriracha (optional)

Directions:

Begin boiling water to cook your noodles. While noodles are cooking, chop and sauté green onions in a frying pan. Clean and dice chicken and add to the same pan. Cook thoroughly, until all (or most) of the water is cooked out of the pan. Add the entire contents of the peanut sauce mix to the chicken, then add the entire can of coconut milk. Simmer on low for about 15 minutes, or until sauce beings to thicken. Optional: add some sriracha for more spice. Serve over pasta and enjoy.

2. Wine Chicken (serves 4)

Ingredients:

  • 1 package of chicken breasts (4)

  • 1 bunch of green onions

  • Bread crumbs

  • Grated parmesan cheese (about ¼ cup)

  • Salt (to taste)

  • Pepper (to taste)

  • 1 stick of butter

  • ½ cup white wine (or cooking wine)

  • Aluminium foil

Directions:

Preheat oven to 425. Clean chicken. On a plate, combine bread crumbs, parmesan cheese and salt and pepper to taste. Roll the chicken in the bread crumb mixture until completely covered. Lightly grease a baking dish, and arrange the covered chicken breasts. Bake, covered with foil, on 425 for 25 minutes. While the chicken is baking, prepare the sauce. In a small saucepan, melt butter, then add the wine; bring this mixture to a boil while stirring constantly (low heat). At a boil, add chopped green onions. Uncover the chicken and add the sauce, dispersing evenly. Continue to bake chicken, uncovered, for 10 minutes or until golden brown. Serve alone, or with a side of your choice.

3. Spanish Noodles (serves 4+)

Ingredients:

  • 1 package of wide egg noodles

  • 1 large can of diced tomatoes

  • 1 package of ground beef (or turkey)

  • 1 sweet onion

  • ½-1 cup of water

  • 1 jar of chili sauce (Heinz or similar)

  • Bacon bits (optional)

Directions:

In a large frying pan, combine meat and onions. Sauté until thoroughly cooked. Add entire can of tomatoes (with juice), entire package of noodles, jar of chili sauce and enough water to allow this mixture to boil. Cover and simmer on low for 15 minutes, stirring occasionally. Optional: add bacon bits to taste. Serve hot.

I grew up eating these recipes, and as I grew older, my mom taught me how to make them. I definitely recommend these to any college student looking to change up your dinner menu.
